Low Carb Smothered Chicken


Ingredients

4 ea Chicken Breast 1 Tbsp Salt 2 tsp Pepper 1 Tbsp Fresh Garlic (minced) 2 Tbsp Olive Oil

2 tsp of Fresh Rosemary (chopped) 1/2 Red Bell Peppers 1c Button Mushrooms (Quartered) 1c Chicken Broth 1c Spinach 1.5c Cauliflower (Florets) cut into about a half inch pieces 4 oz Fontina or Monterey Cheese 3/4c Fresh Tomatoes (diced) Directions...

  1. Start by pounding the chicken breast just enough to flatten the thicker side a little so that it cooks more evenly…

  2. After the chicken is pounded, season the chicken breast with the salt, pepper, and garlic and begin browning it in a cast iron skillet over medium heat.

  3. Once the chicken has browned on one side, flip it over and add the bell peppers and mushrooms. Allow the peppers to begin softening just slightly and add the chicken broth.

  4. Once the chicken broth has been added, increase the heat just slightly and add the cauliflower and spinach. At this point, add half of the cheese to the pan to create a sauce and allow it to thicken.

  5. When the sauce has reached the desired thickness, remove it from the heat, adjust the seasoning, and top it with the rest of the cheese.

  6. Place the pan in the oven on broil, to melt the cheese, (roughly 2-3 minutes).

  7. Remove the pan for the oven and garnish the chicken with the diced tomatoes…

  8. Serve over pasta, rice, baked or roasted potatoes.

  9. Enjoy and repeat!
