Roasted Chicken w/ Herb Infused Honey


We wanted to share one of our favorite recipes with you, in hopes of inspiring great conversations at your table, and around your kitchen. We figured that by now, you’re comfortable with the idea of adding your own culinary signature, and we hope that you get to enjoy this one, many, many times!

For The Chicken

1 Whole Chicken

4-5 Garlic Cloves

1 Onion, cut in half

1/2 bunch of Fresh Rosemary

1/4c Olive Oil

1 Lemon Freshly Squeezed

Salt, Pepper

(Optionally you can use your favorite spices as well.)


Cooking the Chicken

  1. Take the Garlic Cloves, Onion halves, and Fresh Rosemary and stuff them into the cavity of the chicken. (You'll need to remove these later.)

  2. Mix the oil and lemon juice together; drizzle over the chicken and rub it into the skin.

  3. Season the outside of the chicken, with the salt, pepper, and spices.

  4. Set it aside for 10 minutes to allow the seasonings to begin working their mojo.

  5. Cook chicken at 400/F for 10 minutes, then turn the temp down to 325/F and finish cooking.


For the Infused Honey

1tsp of Garlic minced

5-6 stems of Fresh Thyme (chopped into 1/2 inch pieces)

2tsp of Olive Oil

1/2c Honey

1 Tbsp Lemon Zest

Salt and Pepper to taste


Making the Honey

  1. Take the chopped garlic, thyme and oil and begin sautéing them over medium heat for roughly 3 minutes.

  2. Add the honey and turn the heat down to low and allow it to continue cooking for 5-7 minutes.

  3. Remove the Drizzle from the heat and add the lime zest and adjust the seasoning if necessary.


For the Finish
  • Remove the chicken from the oven once it’s finished cooking, and let it cool for 7-8 minutes.

  • Cut the chicken into desired portions and drizzle it with the infused honey.

  • Enjoy as an entrée, in a rice bowl, or over salads...



Optional

If you want to play with the flavors, you could opt to use some of the following:

  • Smoked Salt, or other Smoke Spices

  • Add lemon juice concentrate in the Drizzle recipe to increase acidity and a brighter flavor

  • Add Celery w/ the Onions & other fresh herbs to the cavity when stuffing the chicken (which also should be removed later).
