Pulled Pork Shoulder w/ Whiskey BBQ Sauce


Any time is great time for BBQ. And if your like pulled pork, here is a fairly simple way to make your own using the braising technique referred to in our post on cooking methods. Remember, pay attention during the browning process and manage the heat properly so the the flavors develop evenly, which will later add richness to your sauce as it simmers. Allowing the simmering process to do its job will help ensure that your pork has a tender finish and that your flavors are spot on. Don’t be afraid of modifying the recipe to add your own culinary signature...


For The Pork

3-5 lb Pork Shoulder

4-5 Garlic Cloves

1 Onion, peeled and julienned

2 Oranges quartered

1/4c Olive Oil

1 Cinnamon Stick

1/4 tsp Cloves

1/2c Worcestershire Sauce

3 qt of Chicken Broth

3 Bay Leaves

Salt, Pepper

(Optionally you can use your favorite spices as well.)


Cooking the Pork

  1. Cut the Pork into 3x3 inch chunks, roughly the size of your palm and season the chunks with salt and pepper.

  2. Grab your pot and begin sautéing the pork, oil, garlic, and cloves together over medium heat.​

  3. After the pork has nice browning on the surface, add the remaining ingredients and bring the mix to a boil. ​

  4. After the pork and spices boil for about 2 minutes reduce the heat, and let the pork simmer for roughly 1/5 hours. ​

*NOTE... You’ll know the pork is done when your able to shred it with a fork...



For The Sauce

20 oz of your Favorite BBQ Sauce

2c of your Favorite Whiskey

1c Brown Sugar

2 Tbsp Paprika

2Tbsp Cider Vinegar

1 Tbsp Vanilla

Salt and Pepper to taste


Making the BBQ Sauce

  1. As the pork simmers, add the BBQ sauce ingredients (minus the Whiskey) to the simmering liquid, about 45 minutes into the cooking process. As the sauce reduces, the flavor will increase and the sauce will begin to thicken.

  2. Add the Whisky to the sauce just before removing the pork from the heat.

  3. If you desire a smooth sauce, once the pork begins so shred, remove the pork, oranges, cinnamon stick, bay leaves form the mix and put the sauce into a blender and mix it until it becomes smooth. Then add it back to the pulled pork and simmer for another 5 minutes.


Options

Here are a few chef tips to put a little twist on your sauce...

  • Add Fresh Jalapeño to the simmer to add spice to the sauce.

  • Add Chopped Fresh Pineapple to the simmer for a sweeter sauce.



Serving Suggestions

Serve over Nachos, on a Sandwich, as Street Tacos, over Salad, as a feature in a Rice Bowl or as an Entrée...
