ROASTED PEPPER PESTO

3 Freshly Roasted Red/Yellow Peppers*
(or you could pre purchase them from your local food market)
3 Roasted/Fried Garlic Cloves
1/4 cup of Goat Cheese
1/4 cup of Toasted Pecans
3 tbsp Avocado Oil
Salt & Pepper to taste
1. Start by adding your Roasted Peppers, Garlic, and Pecans into a blender or food processor,
and blending it using the pulse setting for about 5 seconds.
2. Next add the Goat cheese and oil and blend it on a low to medium speed setting For 7-10
seconds.
3. Finally adjust the flavor with the salt and pepper.
4. Great for Pastas, Salads, Pizzas and so much more... Enjoy!
Want to roast your own Peppers, try the following!
Grab a little oil and apply it to the peppers
Rub them thoroughly to ensure that they are well covered by the oil
Sprinkle a little salt over them and place them on a pan (Cast Iron works best) and into the oven on 450 degress until the skins begin to break and peel.
Once the skin begins to peel, remove the peppers from the oven, place them in a bowl covered with plastic wrap (or into a ziplock bag) and allow the peppers to sweat and cool.
Once they’ve cooled, remove the peppers form the oven and peel the skins off.
Season them with just a little salt and pepper and you’re all done!
