Roasted Tomato and Merlot Marinade

1 lb Cherry Tomatoes

1/4c Olive Oil

1.5c Merlot Wine

1/4c Fresh Garlic (chopped)

1 bunch Fresh Thyme

1 Tbsp Black Pepper

1/4c Olive Oil


  1. Drizzle the tomatoes with the first 1/4c of oil and roast them in the oven at 400/F for roughly 15 minutes to allow them to begin browning. (For best results, you’ll want to remove the tomtoes from the heat, and give them a few minutes to cool off)

  2. Once the tomatoes are removed from the heat, set them aside and mix the other ingredients together.

  3. Once you have the other ingredients mixed, gently fold in the tomatoes and any residual juices.

  4. Adjust the seasonings as necessary and give the marinade a few minutes to settle before using it.

  5. Prepare to enjoy!


Use as a marinade on seafood, beef or chicken. It can also be used as a dipping for rustic breads, or as a drizzle over pastas, salads or polenta.
