Sweet & Savory Cedar Plank Salmon

2 Salmon Filets (10-12 oz)

3 oz Stone Ground Mustard

3 Tbsp Honey

3 Tbsp Cider Vinegar

2 Tbsp Fresh Thyme (chopped)

1 Tbsp Fresh Garlic (chopped)

2 tsp Smoked or “Regular” Paprika

2 tsp Black Pepper

2 tsp Lemon Zest

1 to 2 Cedar Planks

  • Take the Salmon Fillets and rinse them to remove any scales and excess oil

  • Mix the remaining ingredients together and let them sit for about 5 minutes and as it dissolves it will become like a paste.

  • While the spice blend sits, heat the grill or the oven at 375F/137C

  • Once the spice blend has sit for a few minutes, spread it over top of the Salmon fillets and place them onto the cedar plank and onto the medium heat of the grill OR if you’re using an conventional oven, place the fillets onto the cedar plank and into the oven

  • Allow them to cook for 20- 25 minutes and check them near the center to see if the fillets are still tender and have begin flaking.


Serve over a hearty salad tossed with fresh fruit, which will play well with the oily finish of the fish. You can also serve it over rice pilaf or with grilled or sautéed vegetables.


KITCHEN TIPS

*When cooking an oily fish like salmon, introducing a little acid into the recipe will help compliment its texture and accent the flavor as it cooks. Here you’ll notice we used just a little mustard and vinegar, which will also help keep the texture from being so oily when its eaten.


*You’ll know the salmon is beginning to overcook, when the flesh of it begins to tighten and the proteins turn white.
